Roast Chicken Sandwich with Crisps and Coleslaw

This was a really nice simple sandwich — roast chicken breast, lemon & oregano mayo, lettuce, cucumber and tomato on doorstop white, served with the usual coleslaw and crisps.
I had it just before leaving on a business trip and was really glad I’d gone for something nice and simple rather than eating crap at the airport. It was generally just a good meal and I was particularly impressed with the chicken. So often chicken breast is either dry and horrible or overwhelmed by mayo — this was nicely moist and full of flavour.
